Skye Gyngell’s first solo venture, Spring, is now open. The restaurant brings Skye’s acclaimed ingredient-led cooking to our New Wing.
Skye and her team are guided by the changing seasons, writing daily lunch and dinner menus that present the best produce simply and memorably within the elegant 19th century drawing room, which is has been refurbished to its former glory. It is the first time that the space has been open to the public for over 150 years.
The light-flooded drawing room, which seats 100 covers, is decorated simply and warmly allowing the large windows, airy high ceilings and original cornicing to frame the space. Cloaked by Black Olive trees, an atrium garden sits enclosed at the room’s centre with flora and fauna designs by acclaimed landscape designer Jinny Blom.
Other collaborators on the project include artwork by Emma Peascod and Valeria Nascimento, natural oak flooring by Danish brand Dinesen, and interior design by Australian, Briony Fitzgerald. Spring's branding and identity has been created by Studio Frith. Uniforms are courtesy of celebrated designers Egg and Trager Delaney, and reflect the restaurant’s easy elegance.
The restaurant team is led by Senior Restaurant Manager Laurens-Jan Peters as well as Head Maitre’D Sarah Flyckt who has previously worked at London restaurants The Delaunay and The Wolseley. Overseeing Spring as Director of Operations is Skye’s long-term business partner, Marie Jackson.

The Salon at Spring
The Salon at Spring, an intimate trio of spaces adjacent to the main Spring dining room, opens on Friday 3 April.
The Salon at Spring will comprise of tree lined tables at the front of the restaurant, a dining bar, and an atrium garden, and will offer a relaxed and airy dining space flowing from Spring’s entrance into the heart of the restaurant.
Open from 12.00-23.00, Monday to Saturday, and from 12.00-17.00 on Sundays, The Salon at Spring will not take reservations, thus encouraging those working or living nearby, or visiting Somerset House or the Strand to drop in for a brief lunch, a post-work cocktail, or an early supper.
The menu, which will deliver the same quality revered in the restaurant, will feature small plates, cheeses, seasonal ice creams and wines by the glass and will reflect Skye’s signature ingredient-led style of cooking. Dishes will include Confit of fennel with crème fraiche and roe (£7); Pan fried monkfish liver, soda bread, salted butter (£8); Piccolo fritto of artichoke & lemon with warm aioli (£6); and Ortiz anchovies on toasted sour dough with chilli and fontodi extra virgin olive oil (£10). A selection of seasonal ice creams created by Spring’s Head Pastry Chef, Sarah Johnson, will also be available alongside a cheese plate.
Private Dining in The Salon at Spring
Spring brings warmth and elegance within a beautiful dining space set in the New Wing of the iconic Somerset House. A dedicated Event Coordinator will ensure every detail is covered. The Salon, the garden dining room sits up to 36 guests in an enclosed interior atrium, allowing for dining throughout the year. The stylishly relaxed restaurant is available for hire too and can accommodate 80 for a sit down dinner or 150 for a standing drinks reception.
